Why buy organic coffee? Does it really matter?

Phil Mackay from Rouge believes it does! Rouge Cafe owner Phil has a background in coffee. Prior to the opening of Rouge, Phil worked for 6 years making and roasting coffee. Over the years, he has gained a lot of knowledge on this subject and is passionate about why it matters.

Sustainability, we hear this word used a lot but what does it really mean when it comes to coffee? Phil and many others agree that we can't keep growing coffee for the masses. When non-organic coffee is grown, it is grown in large open fields exposed to the full sun. These fields have been carved out of the natural landscape. To compensate for the natural environment that normally protects the crop, non-organic farmers have to use synthetic fertilizers, pesticides, herbicides, fungicides and insecticides, making coffee beans a heavily chemically treated food in our beautiful world, not to mention the loss of more rainforest.

Organic coffee, however, is grown naturally under the canopies of the rainforest. Coffee beans like shade and protection from the sun and in this environment the plant thrives, the rainwater can drain away naturally, not disturbing the nutrients of the soil that so often gets washed away in the commercial fields. Keeping our landscapes as natural as possible will ensure the life of the natural habitat. "Organic beans – better for the environment, better for you".

Rouge only serves organic coffee and has their own blend. Phil is part of the development of the coffee locally in Hamilton. They taste and create as crops change and modify the proportions of the blend to enhance the flavour. Their beans are roasted fresh by Essenza Coffee every Monday and Thursday. They also grind fresh in the cafe, especially for your coffee, every time.

Phil opened Rouge 7 years ago. He saw a huge gap in Cambridge for the coffee, wine, and food lovers out there. So Rouge was born with good simple delicious food and great service in mind.

This cute cafe with its courtyard has a great ambiance. A perfect location, tucked in the central town on the ever popular Empire Street. The food is outstanding with a fabulous breakfast menu, a great selection of morning and afternoon tea options with perfect portioned slices and treats and a selection of lunches from gourmet sandwiches to full cooked dishes complemented with a varied and tasty selection of salads including many gluten free options.
