Recipe Share - Dante's Broccoli Salad

Summer's ending..... or is it?

You're invited to a BBQ and you have no idea what to bring - they say bring a salad! Easy right? Your mind goes blank, don't fret, Dante's can help. When I found this delightful, colourful and I must say pretty looking salad, I had to share!

How lucky we are to have this store in our town? What a great little place, full of interesting ingredients and wonderful products, both local and international. Vicki and her helpful staff are ready to give you some inspiration when you need it.

BROCCOLI SALAD WITH SUNDRIED TOMATOES AND FETA

Ingredients:
2 heads of broccoli, florets removed and cut into bite sized pieces
1⁄2 a packet of Telegraph Hill Manuka Smoked Semi-dried Tomatoes,
cut into small pieces
1 spanish onion, cut into thin wedges
150g Vandy's Streaky Bacon, chopped
1⁄2 packet Blue River Dairy Vintage Sheep Feta, chopped finely

Dressing Ingredients:
1⁄2 cup Al Brown Lemon and Oregano Infused Olive Oil
2 Tbsps fresh lemon juice
3 garlic cloves, finely chopped
1 tsp Sweetree Hakarimata Raw Honey
1 tsp The Spice Trader Oreganum
1⁄2 tsp rganic Dijon mustard
Freshly ground Pink Himalayan Sea Salt and Black Pepper
1 fresh red chilli

Method:
Steam broccoli for 10 minutes.
Gently fry Spanish onion and bacon over a medium heat until slightly crispy, and keep aside. Gently fry garlic over a medium heat, and keep aside.

In a small bowl whisk together all of the dressing ingredients until emulsified.

Drizzle the dressing over the broccoli, toss well. Add the semi-dried tomatoes, Spanish onion and feta and combine well.

For best flavour, let the salad rest for 30 minutes before serving.

Al Brown's Lemon & Oregano infused olive oil is made from Koroneki olives grown in the Roys Hill Estate in the Hawkes Bay. The olives have been cold pressed to produce an irresistible oil hell-bent on taking your food to the next level.
